Quinoa with Tomato and Avocado Basil Salad



1 cup of Quinoa
2 tbsp EVOO
2 cups of water
1/4 tsp salt
1/2 tsp ground pepper

2 cup cherry tomatoes, halved
1 avocado pitted and chopped
2-3 bunches of fresh basil
1 red onion thinly sliced

1/4 cup Watermelon White Balsamic
1/4 cup Basil Olive Oil


Bring quinoa and water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender and water has been absorbed, 10 to 15 minutes. Set aside to cool

In a decorative bowl combine tomatoes ,basil , avocado and red onion.

Add cooled quinoa with watermelon Balsamic and Basil Olive Oil toss and serve.
