Lemon Quinoa Salad


2 cups quinoa
3 green onions, sliced
1/2 pint grape or cherry tomatoes, quartered
1/2 English cucumber, diced
1/2 cup sliced black olives
3/4 cup crumbled feta
1/2 cup chickpeas, rinsed and drained
1/2 cup Lemon Olive Oil
1/2 cup Sicilian Lemon White Balsamic
Freshly ground pepper


Cook quinoa according to package directions using stock or water. Fluff quinoa and add Lemon Olive Oil while still warm. Allow to cool and add in remaining ingredients. Flavours are best if made a couple of hours in advance.

Use the Lemon Balsamic to flavour the vegetables and feta that you add to the quinoa.
