Sparkling Sugared Balsamic Cranberries

Ingredients:

3 cups fresh cranberries
1-1/2 cups water
1/2 cup Cinnamon Pear Balsamic
2 cups granulated sugar
1-1/2 cups superfine sugar

Directions

Put the cranberries in a glass bowl. Put the water, Cinnamon Pear Balsamic and 2 cups of the sugar in a medium saucepan. Bring to a simmer, stirring until the sugar dissolves, then remove from heat. Let cool for 15 minutes. You don’t want the mixture to be too hot, or the cranberries will burst. Pour the mixture over the cranberries. Cover and refrigerate for at least 8 hours or overnight.

Drain the cranberries and toss them with the superfine sugar so they are well coated. Spread in a single layer on a baking sheet and let dry at room temperature for at least 1 hour.  Toss a second time with extra sugar if they are still sticky.

Makes 2 cups
