Harissa Chicken Traybake


4 tbsp Harissa Olive Oil

1 cup Greek Yogurt

4 skinless chicken breasts, slashed

1tbsp smoked paprika

1 tbsp cumin

2 clove fresh garlic minced

1 small butternut squash, peeled, deseeded and cut into long wedges

2 red onions, cut into wedges


Heat oven to 350. Mix 2 tbsp of the Harissa Olive Oil with 3 tbsp of the yogurt garlic and spices. Rub all over the chicken breasts and set aside to marinate.

Toss the squash and the onions with remaining Harissa Olive Oil and roast on parchment paper lined cookie sheet for 15 mins.

Remove from the oven, add the chicken to the the pan then roast for a further 20-25 mins until the chicken, squash and onion are cooked through.

Serve with the remaining yogurt on the side, and a big bowl of couscous or rice.
