Crostini with Goat Cheese Black Currant Balsamic Reduction
Ingredients:
1/4 Cup Pomegranate Balsamic
Handful of black currants or Pomegranate Seeds
1 tablespoon Adams honey
1/8 Cup heavy cream
1 tablespoon EVOO
1/4 Cup sunflower seeds
Baguette
Goat Cheese
Parsley for garnish
Directions
First mix the black currants/pomegranate seeds, Pomegranate Balsamic, and honey in a bowl. Then pour into a small sauce pan and turn to a boil until it reduces about half way.
While it’s reducing heat your oven to 350ºF and slice your French baguette and bake until lightly brown – about 10 minutes.
While you’re waiting for the reduction and bread, heat your EVOO and add the sunflower seeds so they toast for about 5 minutes.(DO NOT burn).
Once your reduction is ready, take it off the heat and then whisk in your heavy cream.
After your bread is toasted and the toasted sunflower seeds are all ready, take your bread and add goat cheese first. Then, sprinkle on as many sunflower seeds as you want.
Finally, top it with your reduction (drizzle to taste) and some parsley.
